Apple & Onion Atchar

3 tablespoons sunflower or grapeseed oil
2 onions, peeled and cut into slightly smaller pieces than the apple
3 granny smith apples, peeled and cut into blocks
1 Thai chilli, finely chopped, seeds removed if you want it mild
½ teaspoon turmeric
3 tablespoons rice vinegar or white grape vinegar
Sugar to taste – about 1 dessertspoon
Salt to taste (more than you expect)
